Uncle Jason’s Pesto Chicken from Pilar Kornegay

What a success tonight!  Wow!  And I’m saving the sauce for tomorrow’s lunch; Couscous covered with the pesto sauce, chicken broth.  MMMMMM.  I also included one of my made to order “everything, including the kitchen sink” salads.

Uncle Jason’s Pesto Chicken from Pilar Kornegay 2011-06-28

4 chicken breasts, pounded thin or sliced in half, lengthwise
1/4 stick butter
1tbl olive oil
1/2 cup flour
salt & pepper to taste
3/4 cup prepared pesto
4 oz. log goat cheese, crumbled
1/3 cup chicken broth
Salt and pepper both sides of chicken.  Dredge chicken in flour,
shaking off excess.
Heat oil and butter in a saute pan.  Once heated, add chicken
and cook approximately 2  to 3 minutes per side.  Spread
spoonful of pesto over each chicken breast. Sprinkle goat cheese
on top.  Add broth to bottom of pan.  Cover for 1 minute and
then serve.
